This task will focus on the construction of simplified and sterile food models as close as possible to real food. The food models will be constructed with the aim, ideally, of preserving the 'natural' metabolic profile of real food, while being simple enough to allow precise manipulation of some targeted abiotic parameters. We will employ a strategy combining targeted and non-targeted high throughput metabolomic analysis to construct a full map of molecules involved in the microbial interactions during food fermentations.
